Apple turkey burgers with devilishly hot spicy salsa

Ingredients for the burgers

500 g minced turkey

2 large clove garlic, crushed

1 large onion, finely chopped
2 apples, grated or finely chopped

3 tbsp parsley, chopped

1 tbsp ground cinnamon (optional)

1 tbsp olive oil

4 ciabatta rolls, halved horizontally

100 g halloumi cheese, sliced horizontally into 4 pieces

Freshly ground salt and black pepper

Salad leaves, to serve

For the salsa:

1 tbsp olive oil

1 onion, finely chopped

400 g canned chopped tomatoes

2 fresh tomatoes, chopped
1-2 green chilli, deseeded and finely sliced

1 tsp sugar
Black pepper  

Directions for salsa (to be made first)

  1. Heat the oil in a saucepan over medium heat. Add the onion and gently fry for about 5 minutes until soft. 
  2. Stir in the remaining ingredients. Cover and bring to the boil. Reduce  heat and simmer, covered, for 10 minutes. 
  3. Allow to cool then put in fridge to chill.

Directions for burger

  1. Preheat the grill. 
  2. Put the turkey, garlic, onion, apples and parsley in a bowl and mix thoroughly. Add the cinnamon ( if using), the oil, and salt and pepper to taste. Divide into four burgers. 
  3. Lightly toast the rolls then  keep them warm while you cook the burgers. 
  4. Place the burgers on a rack in a grill pan and grill for 5 to 6 minutes on each side, until thoroughly cooked through. 
  5. Place a piece of haloumi on each burger and grill for a minute or two, until the cheese has melted. 

Serve the burgers on the warm rolls with a large helping of salsa and some salad leaves.
